Flaming Pineapple Mocktail

Makes 1 Mocktail 2 oz. fresh pineapple juice 1 1/2 oz. non-alcoholic tequila 1/2 oz. simple syrup 1/2 oz. lime juice 1/2 Thai, Serrano or Jalapeño chili, sliced Pineapple wedge, for garnish Pineapple leaf, for garnish |
Instructions
1. In a shaker combine the pineapple juice, non-alcoholic tequila, simple syrup, lime juice, and 1-2 slices of chili or to your spice preference.
2. Add ice to the shaker and shake well.
3. Fill a glass with ice. Strain the mocktail into the glass and garnish with the pineapple wedge, pineapple leaf, and a chili slice.
